Apple and Raisins Light Salad for Christmas

Ingredients:

4 cups shredded lettuce
4 apples, peeled and diced
1 cup cheese, diced
½ cup raisins
½ cup plain yogurt
¼ cup light mayonnaise
2 celery stalks, chopped
6 tbsp granulated diet sugar
½ tsp garlic, minced

Preparing:

Mix the yogurt with the mayonnaise, sugar and garlic.
Refrigerate until serving time.

Combine
the lettuce with apples, raisins, celery and cheese.
Bathe the salad with the yogurt mixture and serve.

Christmas Apple and Arugula Salad

Ingredients:

4 cups arugula
½ cup crumbled goat cheeseChristmas Apple and Arugula Salad
½ cup olive oil
¼ cup chopped walnuts, toasted in the oven
¼ cup pine nuts, toasted in the oven
¼ cup white vinegar
2 green apples, peeled
4 tbsp balsamic vinegar
Salt and pepper

Preparing:

Cut apples into wedges.

Put in a pot to reduce the balsamic vinegar.
Add the apples for a few minutes and let cool.

Make dressing with oil, white vinegar salt and pepper.

Mix the cheese with arugula, walnuts, pine nuts and apple in a bowl.
Drizzle with the dressing and serve.

Thanksgiving Sausage and Vegetables Casserole

Ingredients:

1 lb. sausageThanksgiving Sausage and Vegetables Shepherd’s Casserole
24 oz. refrigerated mashed potatoes (or homemade)
14.5 oz. beef stock
10 oz. frozen mixed vegetables, thawed
200 g. grated parmesan cheese
¼ cup flour
1 tsp. Worcestershire sauce

Preparing:

Preheat oven to 200ºC (400ºF).

Crumble and cook sausage in a skillet over medium heat until browned.
Sprinkle it with flour, stir and cook 1 minute.
Add broth gradually, stirring constantly.
Bring to a boil, simmer for 1 minute and remove from heat.
Add vegetables and Worcestershire sauce and stir to combine.

Pour into a greased casserole dish.
Spoon mashed potatoes into even layer on top and sprinkle with parmesan cheese.
Bake for 40 minutes and serve.
