Vegetables Salad

Ingredients:

4 small zucchinis, sliced
1 eggplant, minced
1 tomato chopped
1/2  red chile, chopped
1/2 green chile, chopped
1/2 onion, minced
1 garlic clove minced
Olive oil
Fresh herbs (thyme, oregano)
Salt and pepper

Preparing:

Fry the garlic in the olive oil.
Add onion, eggplant, zucchinis, tomatoes, fresh herbs, salt and pepper.
Cover and cook for 30 minutes.

New Years Cheese and Pistachios DIP

Ingredients:

1/2 cup cheese grinded
1/4 cup parsley
8 oz sour cream
3 tbsp green sauce
2 tbsp cilantro
1 tbsp oregano
1 tbsp pistachio
1 chopped onion

Preparing:

Mix the sour cream with cheese and green sauce.

Process cilantro with oregano, pistachio and onion.
Add sour cream mixture and process.
Cover and refrigerate for 2 hours.

Green Beans and Radish Salad

Ingredients:

1/2 kg green beans tenders, chopped and cooked
1 cup sliced radishes
1/2 cup chopped onion
A lettuce chopped into pieces
3 egg whites hard chopped

Dressing:
1/2 cup natural yogurt
1/4 cup apple vinegar or white balsamic
1 tbsp extra virgin olive oil
1/2 tsp oregano
1/4 tsp pepper
1/4 tsp sugar
3 leaves fresh basil
Salt

Preparing:

Place all ingredients in a salad bowl.
Mix well.
Bathe with the dressing.

Dressing:
Mix
all ingredients.
