Marinated Artichokes for New Year

Ingredients:

2 cans of artichokes
½ cup olive oil
2 garlic cloves, minced
2 tbsp lemon juice
1 tbsp fresh dill, chopped
1 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
Salt and pepper

Preparing:

Mix oil with garlic, lemon juice and herbs .
Season with salt and pepper and mix well.

Drain the artichokes and cut in four.
Drizzle with the marinade and cover.
Refrigerate overnight.

Let stand at room temperature before serving.

Apple and Raisins Light Salad for Christmas

Ingredients:

4 cups shredded lettuce
4 apples, peeled and diced
1 cup cheese, diced
½ cup raisins
½ cup plain yogurt
¼ cup light mayonnaise
2 celery stalks, chopped
6 tbsp granulated diet sugar
½ tsp garlic, minced

Preparing:

Mix the yogurt with the mayonnaise, sugar and garlic.
Refrigerate until serving time.

Combine
the lettuce with apples, raisins, celery and cheese.
Bathe the salad with the yogurt mixture and serve.

Turkey Stuffed with Apples for Christmas

Ingredients:

1 turkey, washedPavo Relleno de Manzana para Navidad
6 apples, peeled and diced
4 bunches of celery, chopped
3 garlic cloves, minced
90 g butter
4 tbsp chopped fresh thyme
Salt and pepper

Preparing:

Melt butter with garlic, thyme, salt and pepper.
Cover the turkey with butter.

Mix
the apple with celery and season.
Fill the turkey with the previous mixture and arrange the legs so that the stuffing does not get out.

Bake at 220ºC (400ºF) for 40 minutes and serve.
